Chicken Pot Soup- Rating-* * * * * Healthy Exchanges Food Newsletter April 1995, pg. 5 or Heart Smart Healthy Exchanges Cookbook pg. 63. Chicken Pot Soup was the easiest recipe yet! Vince and I both thought it needed a little salt though. So we added a very little sea salt and thought it was just perfect. Also I used frozen peas instead of canned to give it a more authentic pot pie texture. Vince said it tasted just like chicken pot pie. I served it with crescent rolls to simulate the flavor of having a "crust" with it. They went with the soup fantastically well. 5 stars!
Cookies and Cream Dessert- Rating-* Healthy Exchanges Food Newsletter February 2002, pg. 12. Personally, I thought this recipe was blah in flavor and much too dry, with a mushy "crust". I think it may of been better in a real pie crust, like Nabisco Oreo pie crust, using Nabisco oreo crumbs instead of graham cracker crumbs for the filling and the topping. And using twice as much pudding, dry milk powder and water, to make the filling less dry. If I try my version that I have in my mind, I'll be sure to post it. However, thankfully every one at the gathering I took it to ate it all up, and I had no leftovers to bring home. At the same time I was a little embarrassed as it wasn't as good as I would of liked a dessert I brought to be. 1 star.
